Cupcakes, Posh Potatoes and Edible Glitter

This Thursday is my birthday! I know some people aren’t really interested in their birthdays as they get older but I’m happy to say this hasn’t happened to me yet – I absolutely love mine! As I knew next week would be quite big and exciting, I decided this weekend to have a quiet one and just have some friends round for dinner. On Saturday morning I curled up with a glass of diet coke (obviously) and my two current favourite cookery books…

The Hummingbird Bakery cookbook has just about every cake or dessert you could ever wish to make. Anyone who has never had a Hummingbird Bakery cupcake on the Portobello Road – you’re missing out! How good do these look?

My Mary Berry ‘At Home’ cookery book is also becoming a firm favourite – all the recipes are really simple and easy. I love cookery books. I try to keep them new and shiny but always end up getting them covered in flour and icing sugar! In the end I decided to make Mary Berry’s posh potatoes for dinner.

These are really simple but gorgeous – you just bake up a potato, scoop out the inside, add tomato, pesto and butter, then return to the potatoes and cook for another half an hour.

I served them up alongside some salad, chips and dips for a perfectly simple, healthy dinner.

On the not so healthy side, I decided to knock up a batch of red velvet cupcakes. I’d never made these before and was a bit dubious when I put them in the oven as they looked a very odd colour… I hopefully watched them cooking…

But was pleased to find they came out a perfect red!

Once I’d made and piped on the icing (note it had got a bit later in the day by now, and I’d swapped my diet coke for a glass of white wine!)...

I added something not in the Hummingbird book, but which I personally think should be in every true baker’s collection…edible glitter.

Doesn’t it just make you happy that this wonderful creation exists?! I have it in several colours but thought as they were red velvet, I’d just create a red dusting.

What do you think? My friends seemed suitably happy, as there aren’t any left now!

  1. I tried making red velvet cake for Valentines day and it was a disaster! Looks like yours turned out much better. The potatoes look delicious. I'll have to give that recipe a go, seems simple enough. xx
